Soft set honey (sometimes called creamed or set honey) is the same pure raw honey we produce in our hives, only with a smooth, spreadable consistency rather than a runny one. Nothing is added and nothing is taken away, the difference is all in the crystals.

All raw honey granulates naturally over time, but the size of those crystals determines whether it turns coarse and grainy or soft and buttery. To make our soft set honey, we gently control the way the honey crystallises so that it sets with very fine, tiny crystals. The result is a honey that spreads like butter straight from the jar, with a silky texture that dissolves cleanly on the tongue.

Because it starts as our seasonal Donegal honey, the flavour follows the season it was harvested in — you'll often find the gentle toffee and fudge notes of our spring hawthorn honey, or the light, sweet character of our summer clover and bramble. Soft set is a firm favourite for anyone who finds runny honey a little messy on toast, and it holds its place beautifully without dripping off the knife.
