Donegal Heather Honey
Rich, aromatic heather honey typically foraged for 2 weeks at the end of summer. This premium honey has a distinctive, slightly tangy flavour beloved by honey connoisseurs.

A number of our apiaries are a short flight to a number of large bogs that are covered in ling heather. When the weather is right throughout the season (just the right amount of sun and rain) there is usually a 2 week window in September where the bogs turn pink and the bees produce one of the most loved honeys we produce.
It doesn't stop there though, ling heather honey is thixotropic meaning that it is not very viscous and needs to be agitated to get it out of the combs. As a result, most beekeepers have to crush the honeycomb in order to extract the honey. Its time consuming but well worth the effort.
Our heather honey will likely contain just a splash of Himalayan Balsam as this also flowers strongly at this time of year. That helps get the honey out of the combs while maintaining its distinctive flavour.
