Donegal Wildflower Honey
Raw seasonal honey typically produced in Spring and Summer from a variety of flowers. Light and Sweet.

This is the typical honey you will see stocked in shops and will either be spring or summer harvested honey. Depending on where the apiary is located around the country (or even county), the exact flower nectars used to make the honey will differ. This honey is usually clear and sweet to the taste.
Spring honey in Donegal will usually contain a high percentage of hawthorn honey with blackthorn and fruit blossoms supplimenting. The production of this honey is heavily weather dependant and given our variable Springs, it is not always available. This produces a slight toffee or fudge flavour to me.
Summer honey is produced during the month of July and will contain high levels of clover and bramble nectars along with summer flowering garden plants and often a bit of rosebay willowherb. Light, sweet and runny and a fan favourite.
