When the weather is right throughout the season (just the right amount of sun and rain) there is usually a 2 week window in September where the bogs turn pink and the bees produce one of the most loved honeys we produce. \u003c\/p\u003e\n\u003cp\u003eIt doesn't stop there though, ling heather honey is thixotropic meaning that it is not very viscous and needs to be agitated to get it out of the combs. As a result, most beekeepers have to crush the honeycomb in order to extract the honey. Its time consuming but well worth the effort.\u003c\/p\u003e\n\u003cp\u003eOur heather honey will likely contain just a splash of Himalayan Balsam as this also flowers strongly at this time of year.
